Galette des rois or the Three Kings Cake is a traditional French tart. It celebrates Epiphany (January 6), the day the Three Kings (les rois) visited the Infant Jesus. Central to Christmas celebrations in France it is baked throughout January. In Paris and the north of France, the galette takes the form of a puff pastry tart filled with frangipane, almond custard-cream with a hint of vanilla. Traditionally two little figurines or 'fèves' are hidden in the almond cream; whoever finds one of them is crowned King or Queen for the day, and everyone else must obey their every whim.
